Strawberry Semi-Freddo

Put generous 2 cups strawberries in a bowl. Mash with fork or potato masher until broken into small pieces but not pureed. Stir in 1/2 cup strawberry jam (I used Just Fruit without sugar) Drain off whey from generous 1 cup ricotta. Stir ricotta and 1 scant cup plain Greek yogurt, 1 tsp. vanilla, 3 Tbsps. sugar together. Using a spoon gently fold in mashed strawberries until rippled. Spoon into individual dishes and freeze for 2 hours. Let soften a little before serving.

Jodie made a coulis to put underneath Semi -Freddo by just blending some strawberries and a little sugar til smooth.
