Coco’s Baked Ziti

Sauce:

1 pound Italian sausage, casings removed and chopped

2 tbs olive oil

1 clove garlic, diced

1 (28-0z) can crushed Italian tomatoes

1/2 cup dry red wine

1 tsp dried basil

Salt and pepper to taste

In a large pot on medium heat, cook sausage, olive oil and garlic for about 10 minutes, until sausage is well browned. Stir in crushed tomatoes, wine, basil, salt and pepper. Bring mixtures to a boil, then reduce heat and simmer about 1 hour.

Remaining ingredients:

1 pound ziti

1 pound fresh buffalo mozzarella, cubed

1/2 cup freshly grated Parmigiano-Reggiano

1/2 cup bread crumbs

Cook ziti according to package directions. Preheat oven to 425. When ziti is cooked al dente (don't let it cook completely), drain and rinse under cold water, In a large bowl, toss together ziti, sauce and cheeses last. Spoon ziti mixture into a 9 x 12-inch baking dish. Top with bread crumbs and a bit more Parmigiano cheese. Can refrigerate over night. Bake for about 20 minutes. Let cool slightly before serving. Makes 6 servings (If you refrigerate I would recommend cooking 30 minutes).
