Mings's Gazpacho

serves 4-6

4 cups fresh tomatoes, peeled, seeded & chopped OR 4 cups canned, diced tomatoes
1 cup cucumber, peeled, seeded & chopped (duh)
1/2 cup chopped onion
1 garlic clove
1 1/2 cups tomato juice
1 Tablespoon each red wine vinegar & lemon juice
2 Tablespoon olive oil
10 pimiento stuffed olives
2 Tablespoons Pace's medium picante sauce - or your preference...hotter?
1/2 teaspoon each basil & tarragon
Salt & Pepper to taste
Buttered croutons, avacado
slices for garnish
