Toasted Lemon Penne

Toasted Lemon Penne Dressing:
Whisk 1/4 cup olive oil, juice from 1 large lemon, zest from lemon, 2 tsps. Salt 1/2 tsp. Pepper til smooth

Cook 1 pound penne reserving 1 cup pasta water.

Whisk 1/2 stick butter over medium heat til caramel color 3-5 minutes

Add pasta, dressing, 4 cups arugula, 1 cup grape tomatoes, 1 cup Parmesan cheese, 1/2 cup toasted pine nuts, 2 Tbsps. capers Toss til coated adding pasta water as needed to loosen sauce.
